Great and tasty pizza sauce for homemade pizzas
There are few foods that come close to the popularity of pizza. This could be because there are so many possible toppings that can be put on the top of the crust, as well as the many different ways of making the dough. However, many people feel that it is the sauce that really makes the pizza special.
It isn’t a surprise that there are many different sauces that can be purchased at the store, with each brand usually tasting a little different than the others. It isn’t hard to make your own, though. If you are going to the effort to make a pizza at home from scratch, it makes sense that you might also want to make your own sauce.
The following recipe is a family favorite that was adopted and adapted, with a little variation, when a member of the family was managing a pizza parlor. A similar sauce was used at the parlor, though this one is still unique. It can be varied and it stands up against nearly any pizza sauce that is sold or used, too.
2 8-oz cans tomato sauce
1 6-oz can tomato paste
1 tablespoon virgin or extra-virgin olive oil
1 small onion, finely chopped
2 large cloves garlic, crushed
1 teaspoon chives, chopped
1 teaspoon oregano
1 teaspoon basil
1 teaspoon parsley
1/2 teaspoon thyme
1/2 teaspoon sage
1/2 teaspoon salt or sea salt
Mix the ingredients thoroughly and refrigerate for at least a half hour prior to use. This allows the flavor of the herbs to mix with the tomato sauce base. The pizza sauce should be stirred prior to spreading it on the pizza dough, however. Note that fresh ingredients tend to make a better tasting sauce. Don’t skimp on quality ingredients, though.
As an nice alternative to the tomato sauce in this recipe, you can use a 16 oz can of stewed tomatoes, run through a blender until it is finely pureed. If you use this alternative, increase the tomato paste to two cans. Otherwise, the sauce might be too runny.
If you add the tomato paste first, then pour about a third of the can full of tomato sauce and swish it around, you can usually get more of the tomato paste out of the can.
If you have no tomato paste for this recipe, condensed tomato soup will work, though the flavor isn’t quite the same and the end product will usually not be quite as thick as it would be if you used the paste.
Fresh tomatoes can also be used. However if you are using fresh tomatoes, it is recommended that you chop them and heat them with the other ingredients until the tomatoes are soft. They can then be cooled and the sauce can be put through the blender prior to refrigerating.
For a slightly different flavor, try adding a teaspoon of summer savory to the sauce. If you like spicy pizzas, chili powder can be added and blended in. For a cheesy flavor, add a couple tablespoons of finely grated parmesan or romano cheese. The amounts are based on personal preference.
This recipe makes enough sauce for two large pizzas. The flavor is good and it goes with most toppings. This sauce can also be made in larger batches and can be frozen for later use. Try this sauce and you might find that this becomes a personal favorite for you and your family, too.
